Mexican Lasagna

My Mexican Lasagna recipe. Because this is how I roll on Tuesday nights:

Super easy to make:

Ingredients
1 pound lean ground beef or turkey
1 (1 ounce) package taco seasoning mix
1  can sweet corn
1 can sliced black olives
1 can black beans
12 (6 inch) corn tortillas
1 cup prepared salsa
1 cup shredded Mexican blend cheese
Directions

•Preheat oven to 350 degrees
•In a large skillet over medium-high heat, brown the ground beef or turkey, and stir in the taco seasoning.
•Line a 9x13-inch baking dish with half the tortillas then layer the beef mixture, half the corn, black beans, salsa, black olives, and cheese. 
•Repeat layers ending with cheese
•Bake at 350 degrees for 20 to 30 minutes, or until cheese is melted and bubbly.
I like to top mine with sliced avocado, sour cream and sliced green onion.

 to fit into these is beyond me.  



Because the NCAA Kansas vs Kentucky championship game was on, the entire airport was empty. I've never seen anything like it. It's like the entire state and even a couple surrounding states just shut down.


The first flight was gorgeous, quick, and easy. There were only about 10 people on the entire plane, so we had the row to ourselves for spreading out our stickers, books, and crayons. We also made a grooming station for My Little Pony. 



The flight from Dallas to Orange County was just as mellow. Kalynn fell asleep with my Etnies hoodie for a blanket while I had a plastic cup of wine and read my book. What a lovely way to spend an evening. 



The turbulence made me spill. I should demand a refund.



When we landed, I saw a flood of text messages telling me Kansas had lost the game.  We went further than some people thought we would and I know those boys played their best! Better luck next year team... Rock Chalk!
